Selection
Select papayas that are green to green and yellow. Unripe
papayas will be green and firm. Ripe papayas will be yellow with
green and the skin will yield slightly when pressed. Avoid
papayas with soft spots or bruises.
Tips
Green papaya can be used in salsa and added to stews or soups
like a vegetable. Papaya seeds are peppery and can be
pulverized for salad dressing and marinade. Add a slice of lemon
or lime to a papaya half at breakfast or lunch to enhance the
papaya flavor.
Storage
Store unripe papayas at room temperature away from sunlight.
To quickly ripen a papaya, place in a brown paper bag with an
apple. To store a ripe papaya, keep it in the crisper bin of your
refrigerator, away from vegetables, for a day or two.
Usage
Wash papayas carefully in cool water before using. Papayas
should be peeled and seeded before eating.
